Unfortunately removing mods did not solve the problem. Completely reinstalled the game, now version v.4.1.1.1.3696083. Also on reddit found advice on cleaning the folder LevelCache - it slightly improved the situation with the speed of loading objects and sliding while moving characters, but the textures are still loaded long.
BUGS. It's not a GOG-specific issue; the problem was the hard drive being overwhelmed by lots of requests, forcing BG3 to wait. Assuming Windows, use Task Manager to check if the drive is hitting 100%. If so, you can use Disk Activity in the Resource Monitor to identify which applications are contributing.

My BG3 is loaded on a SATA SSD and I am loaded up in about 20seconds (though I haven't put a stop watch on it). If I put BG3 on my m.2 I can imagine it would be a little bit quicker.
